Slow Cooker Buffalo White Chicken Chili + Cornbread Bowls

There are recipes I make because they sound good, and then there are recipes that immediately prove why I needed them in my life.

This Slow Cooker Buffalo White Chicken Chili did both.

The first time I made it, our house was on the market and we got a last minute request for a showing from 4:30–5:30.

Of course we wanted to say yes.

There was just one small problem: football practice started at 5:30, which meant Brett and Brayden needed to eat before we left. We needed to get ourselves out of the house. And somehow dinner still needed to happen.

Thankfully, I’d already made the chili.

I quickly baked some cornbread, loaded up the slow cooker, and we headed down the street to my grandma’s house. Brett and Brayden ate before football, we shared dinner with Grandma so she didn’t have to cook, and the potential homeowners got the house to themselves.

One dinner solved about four problems that night.

That’s my kind of recipe.

Buffalo White Chicken Chili Made for the Slow Cooker

This Buffalo White Chicken Chili is a new Pampered Chef recipe for the fall season, and I followed the recipe pretty closely the first time through.

That’s actually how I cook most new recipes.

I’m still gaining confidence in the kitchen, so recipes are my friends. 😂 I like knowing someone has already figured out how much of everything should go in there and how long it should cook.

Once I’ve made something a few times, I might get a little more whimsical. Or I might decide they got it right the first time and leave it alone.

This one didn’t need much help from me.

It’s hearty and comforting like I want a chili to be, but the buffalo flavor gives it a little kick that makes it different from the White Chicken Chowder we already make regularly.

The kids prefer our chowder, while Brett votes for this chili.

For what it’s worth, the kids still ate it despite the kick, so I’m counting that as a win. 😂

The Cornbread Bowls Are the Secret

The chili is good.

The cornbread bowls made it.

Instead of simply serving a piece of cornbread alongside the chili, I used our Brownie Bowl Pan to bake individual cornbread bowls.

Then the chili goes right inside.

Every spoonful can grab a little chili and a little cornbread at the same time, and that combination of flavors and textures is SO good.

It’s also just fun.

I’m always a fan of a kitchen tool doing something beyond what its name suggests, and “Brownie Bowl Pan” certainly doesn’t scream serve your chili in this. But it works perfectly.

This may officially be my favorite way to serve it now.

Why Slow Cooker Meals Work So Well for Our Family

Fall and winter are when I really appreciate meals like this.

Most of our weeknights aren’t the kind where everyone magically appears at the dinner table at exactly 5:00.

There are practices, activities, work schedules, meetings and all the other things that make family schedules interesting.

A slow cooker meal gives us some breathing room.

Dinner is ready, but dinner doesn’t demand that everyone be ready at the same time.

Someone can eat before practice. Someone else can eat when they get home. And I’m not starting dinner over every time another person walks through the door.

The night of our house showing was an extreme example, but it perfectly demonstrated why this style of cooking works so well in this season of our life.

And This One Travels

I hadn’t planned to test the portability of our slow cooker the very first time I made this recipe, but life apparently had other plans. 😂

Being able to pack it up and take dinner with us was a huge win.

Instead of grabbing fast food between the house showing and football, we took the meal I’d already made down the street and ate with my grandma.

That part ended up being one of my favorite things about the night.

A last minute change of plans could have made dinner feel like one more thing I needed to figure out.

Instead, we got everyone fed, made it to football, opened our home for the showing and shared dinner with Grandma.

Don’t Skip the Leftovers

This chili reheats beautifully, which immediately earns extra points from me.

Actually, I think it may be even better the next day.

Giving everything more time together lets those flavors blend, and having a ready to heat lunch or dinner waiting in the refrigerator is never something I’m going to complain about.

If I’m putting the effort into cooking during a busy week, getting another meal out of it is a bonus.

A New Fall Recipe Worth Repeating

This is exactly the kind of recipe I want more of in our rotation.

I don’t need complicated meals to prove I’m getting better in the kitchen. I need good recipes that give me confidence, taste great, and work with the life we’re actually living.

Slow Cooker Buffalo White Chicken Chili checked those boxes.

Brett loved it. The kids ate it despite the kick. The leftovers were even better. The cornbread bowls were a definite win.

And on a night when our schedule changed at the last minute, dinner was the one thing I didn’t have to figure out.

Sometimes that’s all it takes for a recipe to earn repeat status around here.
