Slow Cooker Lasagna Soup: An Easy Dinner for Busy Nights

Sometimes you need a dinner that can roll with whatever the day throws at you. Around here lately, that apparently means dinner needs to be able to leave the house with us. 😂

With our house on the market, last-minute showings have made meal planning a little more interesting. I’ve been leaning HARD on meals I can prep ahead, let cook while we’re doing everything else, and even pack up and take with us if we need to clear out of the house around dinnertime.

Enter: Slow Cooker Lasagna Soup.

This one checked all the boxes. It was simple to throw together, made plenty of food, traveled well, and most importantly, everyone actually liked it.

Slow Cooker Lasagna Soup

🥣 Serves: 7+
⏱️ Prep: About 10 minutes
♨️ Cook: 4–5 hours on HIGH or 7–8 hours on LOW
🍴 Difficulty: Easy
💜 Why we loved it: Simple, hearty, family-friendly, and perfect for busy nights

All the cozy flavors of lasagna in an easy slow cooker soup with very little hands-on work.

And When I Say Everyone Liked It…

This easily fed seven people, including my teenage nephew, who went back for more.

But the bigger endorsement might have come from my 7-year-old.

I had already made a cheese pizza for the younger kids because sometimes you just know when it’s not worth turning dinner into a battle. 😂

He chose the lasagna soup instead.

And then went back for seconds.

Okay then. This recipe stays.

And yes, that is me literally carrying our slow cooker out of the car to share with my grandma. 😂

I made this in my Pampered Chef Deluxe Home & Away Slow Cooker, which has been especially handy during this season because it’s designed to travel. Apparently I’m putting the “Home & Away” part to the test!

Slow Cooker Lasagna Soup

Ingredients

For the Soup

  • 1 lb. lean ground beef
  • 1 tsp. kosher salt
  • ½ tsp. freshly ground black pepper
  • 4 cups low-sodium chicken broth
  • 1 (24 oz.) jar marinara sauce
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tsp. Italian seasoning
  • 1 Parmesan cheese rind, optional
  • 8 oz. dried lasagna noodles, broken into bite-size pieces (about 8–10 sheets)

For Serving

  • 1 cup shredded low-moisture mozzarella cheese
  • ½ cup ricotta cheese
  • Fresh basil leaves, torn

Instructions

Add the ground beef, salt, and pepper to a 6-quart or larger slow cooker. Gently break the beef apart with a wooden spoon.

Add the chicken broth, marinara sauce, diced onion, garlic, Italian seasoning, and Parmesan rind, if using. Stir everything together.

Cover and cook on HIGH for 4–5 hours or LOW for 7–8 hours.

Break the lasagna noodles into bite-size pieces and stir them into the soup. Cover again, set the slow cooker to LOW, and cook for another 25–35 minutes, or until the noodles are tender.

Remove and discard the Parmesan rind.

Ladle the soup into bowls and top each serving with shredded mozzarella, a spoonful of ricotta, and fresh basil.

Serve immediately and enjoy!

A Few Tips From My Kitchen

One thing I especially love about this recipe is that you get all those cozy lasagna flavors without actually having to assemble a lasagna. 🙌

If you’re making it on a busy day, wait to add the noodles until you’re getting closer to dinner so they don’t become too soft.

And don’t skip the ricotta on top if you love traditional lasagna. That little scoop mixed into the hot soup gives you the creamy, cheesy lasagna bite that makes this SO good.

You could serve it with garlic bread or a simple salad, but honestly, it’s hearty enough to stand on its own.

Definitely Going Into Our Dinner Rotation

Between work, kids, activities, and currently dropping everything when someone wants to walk through our house, I’m always grateful for recipes that make dinner one less thing I have to figure out.

This was one of those meals.

Simple. Cozy. Plenty for a crowd. Kid-approved. Teenage-boy-second-helping approved. And apparently portable enough for the home-selling stage of life. 😂

If you give this one a try, I’d love to hear what your crew thinks! And if you have a busy-night recipe that saves dinner at your house, send that my way too. I clearly need all the portable dinner ideas I can get right now. 😂💜

You don’t have to brown the meat first?
